Shabbat Roasted Chicken and Turkey

Ingredients

Kosher chicken 3-4 pounds
-
Chopped garlic
-
Paprika
-
Fresh rosemary and thyme
-
Cumin
-
Juice of one fresh whole lemon
-

Roasting
-
Squeeze lemon and pour over clean chicken.

You can put the remains of the lemons inside the carcass.

Season inside and out with fresh garlic
-
Season with the rosemary and thyme and cumin finish with the paprika.

I roast the chicken in a covered clay pot, but you can use a roasting pan tightly covered with aluminum foil.

Bake in a slow oven 300-325 for at about 1 1/2-2 hours.

Periodically remove the cover or the aluminum foil and baste the chicken. You can remove aluminum foil for last half hour and turn oven up to 350 -375 to brown the chicken.
Thanksgiving Turkey (add on)
I pretty much do the same method for my turkey but of course adjust the cooking time according to the size of turkey
