Potato Latkes

These pancakes are traditionally made for Chanukah, but are delicious any time.

Ingredients

5 pounds potatoes, peeled and cut into chunks

2-3 onions, depending on the size

2 eggs, beaten

1 cup flour (use potato flour during Passover)

1 teaspoon baking powder

1 teaspoon salt

1/4 teaspoon pepper

Canola oil

Preparation 

Two methods to prepare.  You can hand grate the potatoes and onions, or you can use a food processor. 

The way I do it , is to put enough cut up potato chunks into the processor to cover the bottom.  I quickly turn on and off, frequently checking that the potatoes look grated and remain in recognizable pieces (do not overgrate).  Then grate the onions the same way. Keep taking the grated stuff out of the processor and put into colander or a sifter to drain the liquid out of the potatoes until you are done grating.  You can pat the grated potatoes with a paper towel to dry even more.

Then add the beaten egg, flour, salt and pepper to the potato and onion mixture.

Heat oil in a large pan.  Drop large spoonfuls of mixture into the hot oil and fry as pancakes.  Serve with applesauce or sour cream.  

Makes approx 3 dozen latkes
