
Passover Squash Souffle

Ingredients and Preparation
one large butternut squash or acorn squash cut in half and seeds removed
3 eggs
1/2 cup sugar and 2 tablsp of brown sugar
1/2 cup orange juice
one stick of melted margarine
1/2 cup Passover cake meal or 1 and 1/2 cups almond flour
cinnamon
After cutting squash in half, place in a deep baking dish with an inch of water in the bottom. Put a tblsp of brown sugar in each half and sprinkle with a little cinnamon. Cover and bake at 350 degrees until soft (about 30- 45 min.) Remove squash from the shell ,add the margarine and mash with a fork. Add eggs, orange juice, sugar and cake meal. Mix all ingredients until well blended. Pour into a square 8x8 inch pan or an 8 inch round pie pan. Sprinkle the top with some cinnamon.
Bake at 350 degrees for 45-50 minutes.
