Kohlrabi Pancakes

Ingredients:

4 kohlrabi, peeled and shredded

1 small onion, chopped very fine or grated

pinch baking powder

1/2 tsp salt

4 grinds of pepper

1/4 cup flour

2 eggs

Preparation

 

Combine all the ingredients together with a fork.

Heat oil in a frying pan.

Fry large spoon size pancakes into the oil.

Fry and flip and then fry other side.

Drain on a paper towel.

 

Much lighter than potato pancakes.

Serve with cheese, or dressing or whatever goes with your meal.
