Dannys' Tahini Carob Cookies

Ingredients and Prep

1 and 1/2 cups almond flour

1/2 teasp. baking soda

1/2 teasp.coarsley ground Celtic salt 

1 large egg

1 teasp. vanilla extract

1/2 cup tahini

1/3 cup raw or Manuka honey

1 cup carob chips

1- Preheat the oven to 350 degrees. Line two large baking sheets with parchment paper of silat.

2- In a large bowl, combine the almond flour, baking soda and salt, breaking up any naturally occurring lumps in the flour.

3- In a medium bowl and using a fork, beat the egg and vanilla. Add the tahini and honey, and stir until well combined and the mixture is a uniform paste.

4- Add the wet mixture to the bowl of dry ingredients and stir until well combined. Stir in the carob chips. The dough will be sticky.

5- Using your hands, shape the dough into 1" round balls and place them on the sheets 2" apart.Do not flatten the spheres; they will expand and deflate properly while baking.

6- Bake for 10 to 12 minutes until the bottom,s are golden. Let cool.
