Rye Bread and Jewish Sour Dough Rye
INGREDIENTS
1 1/2 CUPS LUKEWARM WATER
2 TBLSP MOLASSES
2 TBLSP CANOLA OIL
2 TBLSP HONEY
1 TSP SALT
1 1/4 CUPS WHOLE WHEAT FLOUR
1 CUP BREAD FLOUR
1 1/2 CUPS RYE FLOUR
4 TBLSP VITAL WHEAT GLUTEN
4 TBLSP CARRAWAY SEEDS
2 1/4 TBLSP ACTIVE DRY YEAST
1 1/2 TBLSP FLAX OR SUNFLOWER SEEDS (OPTIONAL)
DIRECTIONS
Put lukewarm water, molasses,oil,honey,salt, into the pan of a bread maker.
Then add the whole wheat flour ,bread flour, rye flour, vital wheat gluten and lastly adding the yeast, and caraway and flax seeds , into the pan of the bread machine.
Select the whole wheat setting and 2 pound loaf size.
I remove from the machine before the bake cycle and bake in a bread loaf pan for 45 minutes at 350 degrees
JEWISH RYE WITH HOMEMADE SOUR DOUGH
Its too complicated to explain how to make the sourdough so I am just going to write this alternative recipe for those who already know how to make sourdough.
Adjusted ingredients
1 cup water
2 tbsp oil
2 tbsp molasses
2 tbsp honey
3/4 cup sourdough starter
1 teasp salt
1 1/4 cups rye flour
1/2 cup whole wheat flour
1 1/2 cups bread flour
4 tbsp vital wheat gluten
1 envelope of yeast
1 tbsp caraway seeds
1 1/2 teasp ground caraway
Bake as above
