Al's Passover Granola
INGREDIENTS
3 Cups matzoh Farfel
2/3 cup of sliced almonds
1/2 cup sweetened or unsweetened coconut
2/3 cup pecans, broken into large pieces
1/4 tsp.salt
1 1/2 tsp. cinnamon
1/4 tsp nutmeg
6 tbsp. butter or parve margarine
1/3 cup of honey
any dried fruits
mini semisweet chocolate chips
DIRECTIONS
Preheat oven to 325 degrees
Combine the fearful,almonds,coconut,pecans,salt,cinnamon, and nutmeg in a 2 quart mixing bowl.
Microwave the butter and honey in a small glass bowl for one minute until the butter is melted and the honey is more fluid.
Stir the butter mixture into the fearful mixture until all of the farfel is lightly coated.
Spread the mixture over a large cookie sheet with one inch sides and bake for 15 min. Halfway through baking, stir to brown evenly.
Remove from the oven. Cool until room temp., then toss with the dried fruit.
When the fruit filled granola is totally cooled, serve, storing the rest in an airtight container for all 8 days- if it lasts that long!
